The following recipes are a tasty way to use the vegetables raised at the Feedback Art Farm.

Thank You Salad

1  beet, including greens
1 celery stalk, including greens
2 arugula crowns
1 head Romaine lettuce
1 crown Lacinato dinosaur kale
1 crown curly parsley
1 crown peppermint Swiss chard

washed and cut well, tossed in a bowl with unfiltered apple cider vinegar and olive oil.



Allium (All Yum) Sauteed Swiss Chard

1 bunch  Swiss chard
3 tablespoons olive oil
2 tbsp minced fresh garlic
1/4 red onion, diced
1/2 cup dry white wine
2 tbsp grated parmesan cheese
1/2 squeezed lemon (grate the skin for extra zing but only with organic or biodynamically grown lemon)

Wash and cut the chard in 1 inch strips.
Warm the olive oil between low and medium heat in a frying pan, preferrably with a lid.
Drop the garlic and onion into the pan with a low sizzle. 
After a brief fry, when the aroma comes out of the pan, drop the chard in and cover with the lid.
After another brief fry, open the lid and mix the contents together, careful not to smash the chard.
Pour in the wine, and replace the lid.
After the last brief fry, open lid, mix contents together with the lemon and place contents into the serving dish.
Dust the top with the parmeson cheese.
Serves 2-4.

Mineral and vitamin content is lower in chard which is heated before preparation.

Braised Kale with Granny Smith Goodness

1 pound of kale: 2 mature crowns
1cup onions of choice (green onion is strongest taste, sweet onion is mildest)
1 tsp olive oil
1/2 tsp ground black pepper
1/4 tsp salt
4 crimini mushrooms
1 tbsp unfiltered apple cider vinegar
1 large or 2 small Granny Smith Apples

Pre-heat the oven to 300 degrees.
Chop apples into small squares and remove the center and seeds.
Remove the long stem from the kale leaves and compost that, as it is where the majority of oxalates reside.
Then, chop the kale into 2 inch squares.
Find a dandy baking pan, and drop the kale in the bottom of it.
Atop, add the mushrooms, pepper, salt, olive oil and apple cider vinegar in that order.
Place in the oven for 10 minutes, stirring occasionally.
Immediately upon removing from the oven, toss in the apple.
Carnivores can add bacon bits to dazzle your herd.
